Should i keep peppers in the fridge
The paper towel trick only makes sense if you plan on storing bell peppers for more than 2 or 3 days. Technically, not really. If you plan on using fresh bell peppers the next day, you can leave them on the countertop. Nevertheless, cold storage is preferred and a must if you want to store bell peppers for more than a couple of days. Whole bell peppers last up to two weeks if stored properly, while cut ones about five days.
No matter if you have red, yellow, green, or even orange bell peppers on hand, they all last about the same period. Green peppers might store longer than others [UTIA] , but only for a couple of days. Cut peppers lose moisture much faster ; hence their storage time is limited to about five days. Stone also revealed that humidity is a bell pepper's friend. To that end, you'll want to store them in a plastic bag, either the one they came in or a ziplock bag.
And then on top of that, they need to go in the crisper drawer. Stone shared that while bell peppers like the cold, they don't want to be as cold as the coldest point in your refrigerator; for this reason you'll want to store them in the very front of the crisper drawer. Do all this properly, and Stone says your bell pepper will be in tip top, crunchy eating shape for two to three weeks. Here are my favorite methods…. I prefer preserving them in water, but they can also be pickled.
If you want to try canning them in water, you will need a pressure canner. This method is one of the fastest ways to preserve any variety, but make sure you have enough room for long term storage. You can simply cut them in half, in fourths, or in strips, and remove the stem and seeds. This will keep them from sticking together.
Once solid, you can store peppers in a baggie , or any other freezer safe container. Plus, you can do this with any variety that you have. Larger ones need to be cut up first, but you can leave smaller ones whole if you want to. Then simply pop them into your dehydrator , or put them into the oven on the lowest setting. It can take several hours for them to dry completely. Keep in mind that the thicker the pepper, the longer this will take. My favorite way to use up hot peppers is to make crushed red pepper flakes.
I also like to grind other varieties both sweet and hot into powder to fill up my spice jars. You can easily make your own chili powder, or any other type of spice blend that you want. How long peppers will last in storage depends on the method you used to preserve them. Canned ones will be good for a couple of years. One of the simplest forms of preserving peppers is to simply freeze them.
